At about 5:00 starts the inside part section of the video, so you can clearly see the internal ports.
Basically the 32GByte eMMC occupies the slot for a normal NVMe drive in the M.2 slot. You would very likely want to have more that 32GByte diskspace, and it is eMMC, so you would likely change it as the first step.
I would definitely go for the 8GB RAM option, especially if it is a single DIMM, because you can add another 8GB if the original is not enough. But why wouldn’t be enough.
If you plan to add a Coral M.2 card instead the Wifi for Frigate or Speech-to-text, then do a bit a more research.
